Tortilla pizza margherita

serves 2
 yum yum yum!

Ingredients:
1 flour tortilla [10 inch]
1 t olive oil
1 clove garlic
1/2 c Italian 5 cheese blend/ mozzarella cheese
1 large plum tomato, thinly sliced
1 T parmesan cheese
1/4 black or red pepper
4 fresh basil leaves, thinly sliced

Directions:
Heat oven to 450F.

Place tortilla on baking sheet; brush with oil. top with all remaining ingredients except basil
Bake 8-10 min or til tortilla is crisp and cheese is melted. Sprinkle with basil.

Corn salsa

This is one of my favorite salsa's EVER!
makes 3 cups

4 chopped tomatoes [1.5 lbs]
1 c cooked fresh corn kernals
1/4 c finely chopped red onion
1/4 c chopped fresh cilantro
1 finely chopped jalapeno pepper
1/4 c Italian dressing [zesty kind preferred]

Fully loaded scalloped potatoes

serves 12


Ingredients:
1 lbs red potatoes (abt 6)
8 slices bacon
3 T flour
1 c milk
1 c sour cream
3 T chopped chives
1 c cheddar cheese

Directions:
Cook potatoes in boiling water in saucepan 25 mins or til just tender. Drain & cool. Meanwhile, cook bacon as directed on package.

Heat oven to 350F. Crumble bacon; reserve 1/4 c. Cut potatoes into 1/4 inch slices. Whisk flour and milk in large bowl until blended. Stir in sour cream. Add potatoes, remaining bacon and 2 T chives. Stir to evenly coat potatoes.

Pour into 2 qt cassarole sprayed w/ cooking spray. Top w/ cheese.

Bake 30-35 mins or until heated through. Sprinkle w/ remaining chives and bacon.

Taco pizza

adapted from Kraft
serves 8

Ingredients:
1 lb lean ground beef
1 packet taco seasoning [optional]
1 c salsa [chunky preferred]
1 ready-to-use baked pizza crust
1 can refried beans
1 c mexican cheese
1 large tomato, sliced
2 c loosely torn mixed salad
2 T ranch or sour cream

Directions:
Heat oven to 400F.

Brown meat in large skillet; add taco seasoning as usual if desired. Stir in salsa. Spread beans and meat mixture onto pizza crust. Top with cheese and tomatoes. Place directly on rack.

Bake 10-12 mins or until crust is lightly browned and cheese is melted. Top with salad greens and dressing.

Auntie Etta's Spaghetti Sauce

From Sam's sweet aunt. We LOVE this sauce!

Cook:
1 lb. hamburger
1 lb. jimmy dean hot sausage

When cooked add...
2-3 T crushed Italian seasoning (the spice not the dressing)
1 large onion chopped fine
7-8 cloves of garlic smashed and chopped
1 large green pepper chopped fine
1/2 lb. sliced fresh mushrooms
Add it all to the meat to cook a bit

Add:
4 (15 oz.) cans stewed tomatoes
4 (15 oz.) cans tomato sauce
2 small cans tomato paste
a little crushed red pepper flakes
a little lowry's seasoning salt
May need  a little salt and pepper
Stir & let cook all day.  The longer it cooks the better it is!

Loveli CCC's

The best chocolate chip cookies EVER.

Mix together for a long time...
1 1/2 c butter
2 c brown sugar
2 c white sugar
4 eggs
2 T vanilla

Mix first on low, and then medium high.

Mix in bowl...
6 1/2 c flour
2 t salt
2 t baking soda
2/3 c chocolate chips

Turn mixer back to low and slowly add flour mixture. Dough should be a little sticky.

Preheat oven to 375F
Make into balls
Bake 8-10 mins or until barely golden brown (if baking 2 sheets at once, switch at about 6 mins).

Quiche me!

(it's really Quiche Lorraine)

9 inch Pie crust
8 slices of bacon, crisply cooked and crumbled
1 cup shredded swiss cheese
1/3 cup finely chopped onion
4 large eggs
2 cups whipping (heavy) cream
1/4 tsp. salt
1/4 tsp pepper

1. Heat oven to 425 degrees.
2. Make pie crust or use bought one. Place crust in a pie pan. Make sure you press pie crust firmly into the pan. Sprinkle bacon, cheese, and onions in the bottom of the crust. Beat eggs slightly in large bowl with fork or wire whisk. Beat in remaining ingredients. Pour into dish. Bake for 15 minutes.
3. Reduce heat to 300 degrees. Bake about 30 minutes longer or until knife inserted comes out clean. Let stand ten minutes before eating.

Turtle Brownies

From Pioneer Woman

One of my favs! Serves 12

Ingredients:
14 oz weight
package Of caramels, unwrapped

⅔ c
evaporated milk, divided

1 package
(18.25 Oz. Box) German Chocolate cake mix

¾ c
butter, melted

1 c
Chopped Pecans (or Walnuts)

1 c
Semi-Sweet Chocolate Chips


Directions:

Preheat oven to 350 degrees. Grease and flour a 9”x13” baking pan.

Melt caramels and 1/3 cup evaporated milk in the microwave; set aside.

Mix together cake mix, melted butter, remaining 1/3 cup evaporated milk, and nuts.

Press half of the dough mixture into the bottom of the prepared pan.

Bake for 6 to 7 minutes and remove from the oven.

Immediately sprinkle chocolate chips on the baked layer. Drizzle melted caramel over the chocolate chips and drop remaining dough by small spoonfuls over the caramel. It is okay if there is some caramel showing through—that looks yummy!

Return the pan to the oven and bake for an additional 16 to 18 minutes.

Cool. Cut into squares. Enjoy!

Easy Chicken Enchiladas

Got this one because of the fabulous Monica's Philadelphia cooking party :-)
serves 4

Ingredients:
1 small onion, chopped
2 t oil
3 c shredded cooked chicken breasts
1 can (14.5 oz) diced tomatoes, drained
1 tub (10 oz) Philadelphia Santa Fe Blend Cooking Creme
1/2 c Mexican blend cheese
8 flour tortillas (6 inch)

Directions
Preheat oven to 350
Cook & stir onion in hot oil in skillet on medium heat 4-5 mins or until crisp-tender. Stir in chicken, tomatoes, 3/4 c cooking creme and shredded cheese.
Spoon about 1/3 c of chicken mixture into tortilla; roll up. Place in 13x9 inch baking dish sprayed w/ cooking spray; top with remaining cooking creme. Cover.
Bake 15-20 minutes or until heated through. Top with chopped tomatoes and sliced green onions if desired.

Spinach & shells soup

1 can kidney beans, drained & rinsed
1 can white kidney beans, drained & rinsed
1 t chicken bouillon granules
1/4 t pepper
1/2 t sweet basil
1/2 t oregano
1 large box chicken broth
1 c small shells
1 can stewed tomatoes
1 t chopped garlic
1 c spinach

Mix all together and simmer until shells are done. Top with Parmesan cheese & enjoy!

For freezer meal simply defrost, and reheat in pot or microwave.

Lindsay's French Toast

This is enough for 5 of us plus sometimes some leftover depending on how much the kids eat- which is usually about 2-3 slices each! It's a family favorite for sure. I've added several recipes of what I like together to come up with this:

Ingredients:
Loaf of bread (we use wheat like you use for normal sandwiches, but the best to use is sour dough bread or french bread- I usually use about half the loaf when I make this)
6 eggs
abt 1/4 c milk
1-2 T vanilla (depending taste preference)
nutmeg
cinnamon

Directions:
In a pie pan, put cracked eggs, milk, & vanilla. Stir. Add nutmeg sprinkling once over the top of the egg mixture. Stir. Add LOTS of cinnamon. Stir. Add cinnamon until there are lots of brown dots in the mixture. Stir. Dip bread into mixture and flip so both sides are generously covered (but not soaked). I fry them on my plugged in griddle until done (or looks eggy/ light brown on each side). Add cinnamon as needed to make sure there's enough on each slice of french toast.

Ol' Fashioned Banana Pudding

Like G'ma used to make...

Ingredients:
1 (14 oz) can Eagle Brand Sweetened Condensed Milk
1 1/2 c cold water
1 (3.5 oz) package instant pudding and pie filling
2 c (1 pint) whipped cream, whipped*
36 vanilla wafers
3 medium bananas, sliced and dipped in lemon juice


Directions:
* In a large mixing bowl, combine sweetened condensed milk and water.
* Add pudding mix and beat until well blended.
* Chill 5 minutes in refrigerator.
* Fold in whipped topping. (Do this slowly and as few times as you possible to combine, so the mixture will retain its thickness.)
* Spoon 1 cup pudding mixture into 2 1/2 quart glass serving bowl.
* Top with 1/3 each of wafers, bananas and pudding. Repeat twice.
* Garnish as desired.
* Chill thoroughly. Refrigerate any leftovers.

You can also layer in individual serving dishes.

She says "* I’m not quite clear what “whipped cream, whipped” means, but I just used Cool Whip and let it thaw slightly before I started to fold. It may work even better if you let it thaw in the fridge before using.

Update – I’ve learned it may also be heavy whipping cream that is whipped. If you can find Borden whipping cream, which I can’t, then that’s it. Either way, It will be good!"

I used thawed cool whip though and it tasted great
