Marinated Pork Tenderloin

(we used this on boneless pork ribs, it was AWESOME).

From All Recipes

serves 4

Ingredients:
1/4 c soy sauce
1/4 c packed brown sugar
2 T cooking sherry
1 1/2 t dried minced onion
1 t ground cinnamon
2 T olive oil
1 pinch garlic powder
2 (3/4 lb) pork tenderloins

Directions:
1. Place soy sauce, brown sugar, sherry, dried onion, cinnamon, olive oil, and a touch of garlic powder in a large resealable plastic bag. Seal, and shake to mix. Place pork in bag with marinade, seal, and refrigerate for 6 to 12 hours.
2. Preheat grill for high heat.
3. Lightly oil grate. Place tenderloins on grill, and discard marinade. Cook 20 minutes, or to desired doneness. Slice into medallions, and serve.

OR you can make them in the oven. Bake at 350F for 30 mins (basting with juices half way through), turn up to 400F for 20 min. And then it'll be done. (That's what we did, and they were nice and tender.)

Sweet Pork Burritos

Have to post this one after eating at Kera's tonight. Yummy! Will be trying again sometime!

Sides to include:
Tortillas (of course)
Cilantro Lime Rice (recipe at the end)
Sweet pork
Green Chile Enchilada sauce
cheese (I like Mexican blend best)
lettuce
Pico De Gallo or salsa

Sweet Pork
4 lb. pork roast (I used a rump)
2 cups brown sugar
1 (12-14 oz.) jar salsa
2 cans Coke (24 oz. or 2 1/2 cups)

Cook meat with stuff listed above in crockpot. Low setting 8 hrs. Shred pork.

Cilantro Lime Rice
3 cups cooked rice
juice of 2 small limes
zest of 1 lime
1/2 cup cilantro
1 teaspoon salt

Mix all ingredients together and enjoy.

Shredded Kalua Pork

This always reminds me of Naika's pork that she would make for me, although I think hers is a little better.

3-4 pounds pork roast
1-2 T Kosher salt
1/4 c. liquid smoke
1 c. cup water (or beef or chicken broth for a little extra flavor)
4 washed ti leaves (if ti leaves aren't available don't worries-- it is still great without them.)

Line bottom of crock pot with 2 ti leaves (if you have them). Rub pork generously with salt, pour on liquid smoke then place on ti leaves (or in the crock pot). Add water. Fit remaining ti leaves (again, if you have them) around outer edge of crockpot. Cover and cook on low for 8-10 hours. Garnish with chopped green onion or cilantro. Serve with rice.
